I first discovered Ganache Solution during a shelf-life course with Alexandre, and I’ve been using it ever since. The software makes it incredibly easy to develop recipes from scratch while keeping key parameters like fat content, water content, sweetness, and even cost in check. What really sets it apart is its ability to manage things like anti-freezing power which relates to water activity, which is crucial for understanding the shelf-life potential of a recipe.
Lately, I’ve even used it to create ice cream recipes and to convert traditional patisserie recipes into plant-based versions. It’s been a huge time-saver for me, speeding up the development process of new products. I honestly can’t imagine going back to the way I used to work before Ganache Solution. For any pastry chef looking to take full control of their recipe development, I can’t recommend this software enough.
Alexandre and Yuri have also always been prompt in providing support whenever I had some queries.
Honestly, the name “Ganache Solution” doesn’t do it justice—something like “Pastry Solution” would be more fitting!

The ganache solution program is a perfect platform to keep track of all the recipes and also to make sure that the recipes are nicely balanced. Balancing a recipe is something that requires some skills and that is easily achieved here with a few mouse clicks. I personally like the fact that many ingredients have already been added to the basic program, but adding new ingredients sometimes takes some searching.
It is super easy to adjust recipes to the quantities you need, with the automatic calculation tool you can easily reduce recipes to the desired quantity. There is also a handy food cost calculation tool in the program which allows you to make very accurate price calculations.
After a course by Alexandre himself you are well on your way to adding and recalculating a lot of recipes in the program. Designing new recipes is also child’s play afterwards. Of course you don’t know everything from the start but the help you can get online by email is excellent, every question is answered very quickly and that is of course important because when you have a question you are usually in a designer mood and you want your answer rather yesterday than today. In short from my side only praise for this program and I am very happy to be able to work with it! Keep up the good work guys! 😉

When you use Ganache Solution, you see that everything has been thought of, from the Kcal and cost calculation to the possibility to divide the recipes per folder, etc. One of the features that I use the most is the “compare recipes” – I find it great to be able to put recipes side by side and observe the differences between them and where they can be improved.
No doubt that this has accelerated my creative process and makes me spend much less time on getting my ideas in place. Also, the more I use it, the less I need to test my recipes, which is also cost-saving in terms of ingredients.
As mentioned above, I love the fact that it’s a super intuitive tool, it makes it just so easy to use!
